Craving something easy and delicious? Try this Mango Pizza with Fresh Arugula! Chef Annicka made the sauce from scratch but you can also use bottled pasta sauce, if preferred. (Recipe excerpt from Mango Recipe Book by the Department of Agriculture, St. Lucia)

- PIzza dough
- 1 Half-ripe mango
- Caramelized onions
- Mozzarella cheese
- Goat cheese
- Arugula leaves
- Basil to taste
- 1 Garlic clove
- 2 tbsp Olive oil
- 4-6 Tomatoes
- Salt to taste
- Black pepper to taste

Make the sauce: in a blender, combine tomatoes, diced garlic, olive oil, fresh basil, salt and black pepper. Blend until a sauces reaches a smooth consistency. Spread pizza sauce over pizza dough.

Assemble pizza: top pizza with mango slices, mozzarella cheese, goat cheese, and caramelized onions.

Bake for 10-15 minutes or until golden brown.

When the pizza is cooked, spread fresh arugula leaves on top.
