In a medium sized pan, bring 1 ½ cup of water to a boil.
Add sweet potato flour, stir until desired puree consistency. Let cool down a bit before adding all-purpose or gluten-free flour.
Add flour to sweet potato mash and knead to form a sticky dough.
Divide dough into 8 pieces and form each piece into a ball. Using a rolling pin, flatten each ball of dough until thin.
Cook rotis in a hot frying pan for about 2 minutes (1 minute per side).
Served warm (buttered and salted) as a side.
