Sweet Potato Flatbread (Roti)

Ingredients

  • 1 Cup Carmeta’s Sweet Potato Flour
  • 1 Cup Carmeta's Fine Cassava Flour + extra for dusting about (1/2 cup)
  • 1 1/2 Cup Water

Preparation

  1. In a medium sized pan, bring 1 ½ cup of water to a boil.

  2. Add sweet potato flour, stir until desired puree consistency. Let cool down a bit before adding all-purpose or gluten-free flour.

  3. Add flour to sweet potato mash and knead to form a sticky dough.

  4. Divide dough into 8 pieces and form each piece into a ball. Using a rolling pin, flatten each ball of dough until thin.

  5. Cook rotis in a hot frying pan for about 2 minutes (1 minute per side).

  6. Served warm (buttered and salted) as a side.
