Bring a large pot of lightly salted water to boil. Cook pasta in boiling water for 8 to 10 minutes. Drain noodles and leave to cool.

Season chicken breast with salt and pepper; set aside. Heat olive oil and butter in a frying pan and sear chicken, skin side down until it appears golden brown and crisped.

Preheat oven to 375 degrees F. Turn the chicken over and sear on the flesh side until slightly golden. Place in preheated oven for 10 minutes or until cooked through.

In a medium frying pan with olive oil, add pasta with chopped parsley, salt and pepper and toss to combine. Serve on a plate with chicken supreme. Top with grated parmesan cheese if desired.
