Canned Salmon to the Rescue

Ingredients

  • 1 large can salmon
  • I sprig scallion chopped
  • I tomato diced
  • 1 small onion diced
  • Juice of half a lime
  • Salt and black pepper
  • Small piece of habanero minced
  • 2 pimentos minced
  • 2 Tbsp. vegetable oil

Preparation

  1. Drain the salmon and set aside.
  2. Heat oil in a skillet, add onions and cook until translucent. Add tomatoes and peppers and cook for about 1 to 2 minutes.
  3. Add habernero pepper, drained salmon, lime juice, scallions, salt and pepper to taste. Cook for a few more minutes then remove from heat.
