The Ministry of Agriculture (MOA) in St. Lucia has published a cookbook featuring 25 original cassava recipes, and who knew the starchy staple could be prepared in such sweet and savoury ways! These Cassava Pancakes by Lisa Hunt-Mitchell are a great twist on a borrowed Caribbean breakfast favourite.

- 1 1/4 cups mashed cassava
- 1/2 cup cassava flour
- 1/4 cup coconut milk
- 1/4 cup water
- 2 Tbsp. oil
- 2 eggs
- 1 1/2 Tbsp. sugar or other sweetener
- 1 Tbsp. baking powder
- 2 tsp. grated ginger
- 1 tsp. cinnamon
- 1 tsp. vanilla essence
- 1/4 tsp. nutmeg

In a large bowl sift together the flour, baking powder, sugar, and cinnamon.

Make a well in the center of mixture and pour in milk, essence, eggs, oil and ginger; mix until smooth.

Heat a non-stick pan over low heat and pour 1/4 cup of batter onto the pan.

Turn when bubbles form on top of the pancake, cooking the other side until golden brown. Repeat until batter has been used up.

Serve with your choice of local fruits.
