Canned Salmon to the Rescue

Ingredients
- 1 large can salmon
- I sprig scallion chopped
- I tomato diced
- 1 small onion diced
- Juice of half a lime
- Salt and black pepper
- Small piece of habanero minced
- 2 pimentos minced
- 2 Tbsp. vegetable oil
Preparation

Drain the salmon and set aside.

Heat oil in a skillet, add onions and cook until translucent. Add tomatoes and peppers and cook for about 1 to 2 minutes.

Add habernero pepper, drained salmon, lime juice, scallions, salt and pepper to taste. Cook for a few more minutes then remove from heat.
