Douce Kokoye (Coconut Sugar Cakes)

Ingredients
- 3 cups coconut milk
- 1 cup sugar
- 1 cinnamon stick
- 1 drop of vanilla essence
- Key lime zest
Preparation

Mix all the ingredients (except the vanilla) in a thick-bottom pan. Let the mixture boil for 45 minutes to 1 hour.

Once the liquid thickens, add the vanilla and let cook until the preparation is thick enough that it pulls from the sides of the pan, or turns a brown shade.

Spread onto some parchment paper and let cool…bon appétit!
