Sun-dried Tomato Herb Vinaigrette

Sun-dried Tomato Herb Vinaigrette

Ingredients
  • 1/2 cup sun-dried tomatoes packed in oil
  • 2 Tbsp. balsamic vinegar
  • 1/2 cup oil from sun-dried tomatoes
  • 1 Tbsp. chopped fresh basil
  • 1 Tbsp. chopped red onion
  • 1/3 cup parmesan cheese
  • 1 Tbsp. oregano
  • Pinch salt
  • Pinch pepper
  • 1 tsp. sugar
Preparation
  1. Add sun-dried tomatoes to blender and pulse until chopped into smaller pieces.
  2. Reduce speed of blender then add balsamic vinegar and oil to the sun-dried tomato pieces. Pulse until well combined.
  3. Add all the remaining ingredients and pulse until the dressing combines. Pour into a container for serving and put to chill.
