Sun-dried Tomato Herb Vinaigrette

Ingredients
- 1/2 cup sun-dried tomatoes packed in oil
- 2 Tbsp. balsamic vinegar
- 1/2 cup oil from sun-dried tomatoes
- 1 Tbsp. chopped fresh basil
- 1 Tbsp. chopped red onion
- 1/3 cup parmesan cheese
- 1 Tbsp. oregano
- Pinch salt
- Pinch pepper
- 1 tsp. sugar
Preparation

Add sun-dried tomatoes to blender and pulse until chopped into smaller pieces.

Reduce speed of blender then add balsamic vinegar and oil to the sun-dried tomato pieces. Pulse until well combined.

Add all the remaining ingredients and pulse until the dressing combines. Pour into a container for serving and put to chill.
