Know your herbs: the Bouquet Garni

Bouquet garni is the French term for a bunch of herbs that are tied together or placed in a piece of cheesecloth. It is added to soups, stews, stocks and broths to impart flavour. Tying the herbs makes for easy removal when cooking is done.

When tying the herbs together in cheesecloth, additional ingredients such as whole peppercorns, citrus peel and even whole spices may be added.
